Roasted Garlic Mushrooms

INGREDIENTS
- 1 pound (450g) mushrooms (such as cremini or button mushrooms), cleaned and stems trimmed
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
INSTRUCTIONS
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the minced garlic, olive oil, balsamic vinegar, thyme leaves, salt, and pepper. Stir well to combine.
- Add the mushrooms to the bowl and toss them in the garlic and oil mixture, ensuring they are coated evenly.
- Arrange the mushrooms in a single layer on a baking sheet or a shallow roasting pan.
- Place the baking sheet in the preheated oven and roast the mushrooms for about 20-25 minutes, or until they are golden brown and tender, stirring once halfway through cooking.
- Once the mushrooms are roasted, remove them from the oven and let them cool slightly.
- Transfer the roasted garlic mushrooms to a serving dish. Sprinkle with fresh parsley for garnish if desired.
- Serve the roasted garlic mushrooms as a side dish or as a topping for grilled meats, salads, pasta, or as a filling for sandwiches.
